  1. Place olive oil, shwarma spice, garlic, slat, pepper and lemon juice in a large bowl and mix.
  2. Add the chicken, Making sure it is thoroughly coated. Let sit for 15-20 minutes to allow spice mix to sink in.
  3. While you wait, put garlic, tahini, cilantro, yogurt and lemon juice in a bowl , a pinch of salt and pepper to taste and mix thoroughly; You can set that aside.
  4. Now heat a frying pan over high heat and grill the onion until soft and brown to your liking. Then transfer to a plate and cover to keep warm.
  5. Using the same pan with the juices still in, place your chicken and grill, turning once, until well cooked and lightly browned on both sides, (about 3-5 minutes depending on the thickness of your chicken). Once done cooking, take off heat.
  6. To assemble, fill the lavash bread with the grilled chicken, onion, lettuce, tomato slices, pickles and top with a generous drizzle of the tahini sauce. Roll to ensure the contents are secure.
  7. You can opt to wrap the middle with paper or foil or serve as is. Serve immediately.
