Ingredients

  • 6–8 pieces Galil Matzos , crumbled into bite-size pieces
  • 1 large onion, finely chopped
  • 1/2 cup fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 2 cups chicken broth (or vegetable broth, if preferred)
  • 3 tablespoons Galil Extra Virgin Olive Oil
  • Salt and fresh ground pepper to taste

Instructions

  • 1

Preheat your oven to 350°F (175°C). Lightly grease a baking dish that will hold your stuffing mixture.

  • 2

In a large bowl, break the matzos into small, bite-size pieces. (For extra crunch, you can lightly toast the matzos in the preheated oven for about 5 minutes.)

  • 3

Heat the olive oil in a large skillet over medium heat. Add the finely chopped onion (and celery, if using) and sauté until the vegetables are soft and translucent—about 5–7 minutes.

  • 4

Stir in the chopped parsley, thyme, and sage. Season with salt and ground pepper, and allow the herbs and vegetables to sauté together for another minute.

  • 5

Transfer the sautéed mixture to the bowl with the crumbled matzos. Gradually pour in the warm broth, gently tossing the mixture to combine. Adjust the broth amount as needed for your desired level of moisture.

  • 6

Once everything is evenly mixed, transfer the stuffing to your prepared baking dish. Cover the dish with foil and bake in the preheated oven for 20–25 minutes, until the stuffing is heated through.

  • 7

Remove the dish from the oven and let the stuffing rest for a few minutes before serving.

Tips and Tricks

Maximize Flavor:

  • Lightly toast the matzo before soaking to add a deeper, nuttier flavor.
  • Use a mix of fresh herbs like parsley, thyme, and sage for a well-rounded taste.
  • Sauté onions, garlic, and celery until golden to build a rich base.

Perfect Texture:

  • Soak the matzo in broth just until softened—avoid over-soaking to prevent sogginess.
  • Add beaten eggs to help bind the stuffing and create a fluffy texture.
  • Bake uncovered for a crispy top or cover with foil for a softer finish.

Make It Your Own:

  • Mix in dried fruits like cranberries or apricots for a hint of sweetness.
  • Add chopped nuts or mushrooms for extra depth and texture.
  • Use vegetable broth for a vegetarian version without sacrificing flavor.
