This chestnut rice is a deliciously simple dish, blending fluffy rice with the rich, earthy sweetness of chestnuts. Ingredients

  • 1 cup short-grain rice (like sushi rice)
  • 1 cup cooked and peeled chestnuts, halved
  • 2 cups water or vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin (optional)
  • 1/2 teaspoon salt
  • 1 tablespoon sesame oil (optional)
  • Chopped green onions for garnish (optional)

    Rinse the Rice:
    Rinse the rice under cold water until the water runs clear. Drain well.

    Cook the Rice:
    In a rice cooker or a pot, combine the rinsed rice, water (or broth), soy sauce, mirin, salt, and chestnuts. If using a pot, bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.

    If desired, drizzle with sesame oil and fluff the rice with a fork. Garnish with chopped green onions before serving.
