  1. Preheat the oven to 325°F (165°C) and line a large baking sheet with parchment paper.
  2. Mix the dry ingredients: In a large bowl, combine oats, chopped Galil almonds, walnuts, pumpkin seeds, sunflower seeds, cinnamon, nutmeg, ginger, and salt. Stir until evenly mixed.
  3. Prepare the wet mixture: In a small bowl, whisk together melted coconut oil, Galil honey, maple syrup, and vanilla extract.
  4. Combine and coat: Pour the wet mixture over the dry ingredients and stir well to coat everything evenly.
  5. Bake: Spread the granola mixture evenly on the prepared baking sheet. Bake for 20-25 minutes, stirring halfway through, until the granola is golden and fragrant.
  6. Cool and add fruit: Once out of the oven, allow the granola to cool completely. Stir in the chopped Galil apricots and figs.
  7. Store: Transfer the granola to an airtight container to keep fresh for up to two weeks.
